Grilled vegetable salad
Ingredients:
- 1 each of yellow, orange and red peppers
- 2 carrots
- 1/2 egg plant
- 1 each of yellow and green zuchini
- 6 shitaki mushrooms
- 3 portobello mushrooms
- 1/2 fennel bulb
- 10 fresh basil leaves
- 3 fresh thyme leaves
- 1 garlic shallot
- Salt and pepper
- New Hemisphere™ Hemp Seed Oil
- Balsamic vinegar
- Vegetable oil
Instructions:
- Cut the vegetables in half and season with salt pepper and thyme.
- Add some olive oil & grill the vegetables.
- While the vegetables are under the grill, sauté the garlic..
- Cut vegetables into strips & place on a tray & sprinkle with sautéed garlic.
- Mix the balsamic vinegar & new hemisphere™ hemp seed oil
- Drizzle oil mix over the tray of vegetables & garnish with the basil.
