Grilled vegetable salad

Ingredients:

  • 1 each of yellow, orange and red peppers
  • 2 carrots
  • 1/2 egg plant
  • 1 each of yellow and green zuchini
  • 6 shitaki mushrooms
  • 3 portobello mushrooms
  • 1/2 fennel bulb
  • 10 fresh basil leaves
  • 3 fresh thyme leaves
  • 1 garlic shallot
  • Salt and pepper
  • New Hemisphere™ Hemp Seed Oil
  • Balsamic vinegar
  • Vegetable oil

Instructions:

  1. Cut the vegetables in half and season with salt pepper and thyme.
  2. Add some olive oil & grill the vegetables.
  3. While the vegetables are under the grill, sauté the garlic..
  4. Cut vegetables into strips & place on a tray & sprinkle with sautéed garlic.
  5. Mix the balsamic vinegar & new hemisphere™ hemp seed oil
  6. Drizzle oil mix over the tray of vegetables & garnish with the basil.
